The village of Shale in Ethiopia’s Yirgacheffe region is a hub for sustainable coffee farming. The region’s high altitude and natural forests create ideal conditions for coffee cultivation. Around 1,500 small-scale producers deliver their organically grown coffee to the washing station owned by Haileslassie Ambaye, a pioneer in specialty coffee. He supports farmers by providing interest-free loans and training, helping to ensure a sustainable future. The specific processing methods and unique characteristics of the Yirgacheffe region contribute to Shale’s distinct flavours, yielding a juicy coffee with fruity notes of lychee and strawberry.
